Bento 33: Beetroot mania!

I do love beetroot, and it’s been ages since I had some beetroot colored/flavored onigiris. So today I decided that some beetroot onigiris stuffed with bacon furikake was in line…yum yum, everything just tastes better with bacon! My beetroots (came pickled in a bag) were huge, and I wanted to use up at least ONE beetroot!

Comfort food was in line tomorrow as I would be working till late in the evening….so another carb injection was in line! I made some potato salad as well as bacon onigiris – but these are special potato salad! Well, special is probably not the correct word – it’s the garbage pail potato salad! Taking inspiration from my good friend dreymer, these potato salad contains carrots as well, which are leftover bits from some of my carrot flowers. I also chopped in the 1/2 leftover beetroot from making red onigiris, some peas, and mixed it all up with Kewpie mayo, salt & pepper and a sprinkle of nanami togarashi. Excellent way of using up leftover bits and piecs of veggies! Plus I love how the beetroot made the potato salad look pink….pretty 🙂

Top layer: bacon-stuffed onigiris mixed in with beetroot, padded out with brocolli
Bottom layer: Organic strawberries and halved golden plum tomatoes, two heart-shaped marshmallows, potato salad.

    I love the way you incorporated the beets into the rice! Such a pretty purple color. 😀
